When autumn envelops the Veronese plain with its golden light and crisp air, there is an event that warms hearts (and palates): Taste of Earth, the evolution of the historic Fiera del Bollito con la Pearà.
From November 7 to 23, 2025, the exhibition center in Isola della Scala, a few kilometers from Verona, will welcome you for a gastronomic and cultural experience that is much more than just a fair: it is a journey through tradition, taste, and conviviality.


Bollito con la pearà: a symbol of Veronese cuisine
For the people of Verona, boiled meat with pearà sauce (bollito con la pearà) is not just a dish, but a family ritual handed down from generation to generation. The word pearà comes from the Veronese dialect and means “peppery”: it is a creamy sauce made from breadcrumbs, meat broth and plenty of black pepper, which, according to true tradition, is also enriched with bone marrow. Originally a poor man’s dish in the kitchens of Scaliger families, it was served with boiled meats during the harsh winter months, when every part of the animal was used with respect and ingenuity.
Over time, this rustic and enveloping combination has become the star of large Sunday dinners and festivities. Even today, bollito con la pearà tells a story of simplicity, domestic warmth and peasant roots that survives intact, winning over even the curious palates of visitors.


A salon of flavours without borders
But the magic of Taste of Earth does not stop at local tradition. Alongside the great Venetian classics – from steaming risottos to homemade pasta – you will find yourself immersed in a mosaic of European cuisines: from Spanish tapas to paella, from Greek moussaka to Austrian specialities. In a single large pavilion, you can take your palate on a journey, discovering the aromas and flavours of lands near and far, without ever leaving Verona.
Strolling among the stands will be like travelling through small corners of Europe, each with its own story to tell and a dish ready to share.
Shows, atmospheres and moments to enjoy together
Taste will be the protagonist, but not the only one. In the Showtime Arena, evenings of music, theatre and comedy await you, allowing you to enjoy the event with light-heartedness and cheerfulness. Children can have fun with dedicated activities and workshops, while in the charming Borgo della Pila you will find dozens of exhibitors with gastronomic and artisan products from the local area and Europe.
Everything is designed to draw you in completely: from the scenography, with attention to the smallest details, which will make you feel part of a story, to the convivial atmosphere that accompanies every encounter.
